Eggs & mayo


Ingredients:

ICE CREAM!! :-)

Vanilla ice-cream!

Can you believe it?!! :-) That on this low-carb diet, you can actually eat ice cream, as part of the diet is high fat, and ice cream is made of cream - high in fat and protein - and eggs, and sweetener with no calories. Plus the flavor of your choice. Vanilla is a good choice, and vanilla contains no calories either.

Ingredients:

0,5 liters cream (2 cups)
4-5 eggs
Sweetener (like Stevia, erythritol/Sukrin), about 1 cup
Flavor (vanilla, for instance, 1-2 teaspoons of vanillapowder)


Split the eggs, and whisk the egg-whites until stiff (or, just foamy works too). Whisk the cream with the sweetener, until it becomes stiff (whipped cream), and then add the egg yolks and the (vanilla) flavor. Then add the eggwhites. If you're making it to eat later in the evening, you can put it in 2 bowls (if you're 2 persons eating) and it's paobably done about 3 hours later. If you wait too long, it will be too hard to eat, so check it every half hour or so. Or, if you're making it for later and to keep in the freezer, I would recommend to put it in 4 smaller bowls, as you don't really need more than that per portion, it's pretty sweet. And in a smaller bowl it wouldn't take as long to soften. Take it out a little while before you're going to eat it, though, as it is harder than normal ice cream. If you want it for dessert after dinner, take it out when you cook dinner and let it sit and soften a little.


Here are some other ice cream recipes with ideas for different flavors (as allowed on low carb diet; you can use berries, or nuts, coffee, vanilla, dark chocolate 70% cocoa, ginger, green tea.. or mint!) Salmon sushi


Eat sushi without the rice. Salmon that has been in the freezer for 5 days is safe. Take it out of the freezer a few hours before the meal, or put the frozen piece in the refrigerator the evening before to let it defrost.
Cut it in pieces, and eat with soy sauce, and avocado on the side, as well as cucumber if you want.

Bread - very low-carb



Ingredients:

4 eggs
Almond flour (1 cup)
Psyllium husk fiber (4 spoons)
Locust bean gum (1 teaspoon)
Sour cream (100 grams)
Cottage cheese (150 grams)
Butter (50 grams)
Baking soda (2 teaspoons)
Water (just a little, so it's not too compact)

Mix everything together, and lay on baking paper inside of an oven-safe casserole.
Heat in oven @ 175-180 degrees Celcius (350 Fahrenheit) for 50 minutes.

Pancakes (with almond flour)



Ingredients:
(makes about 3 pancakes)

Almond flour, one cup
2 eggs
Water or sparkling water, 1/2 cup
Olive oil, 2 tablespoons
Salt, 1 teaspoon
Sweetener (Splenda, 2-3 tablespoons)

Mix all ingredients (add water a little at a time to see how much you need).
Heat some butter in a frying pan and make the pancakes.

Eat as they are, or with blueberries (mixed with sweetener to make your own sweet blueberry-jam), or put whatever you like on them; tomatoes, ham, cheese...

Vegetable drink (or purée if thicker)



Boil some broccoli and cauliflower to make them softer. Then mix in the blender with water, and some plain yoghurt too, if you want. Add some sweetener (Splenda, or other). Actually taste pretty good :)
Drink as a sweet drink after dinner, in the evening, for breakfast/lunch/inbetween meals, or drink with dinner (along with the chicken/fish/steak, protein part of dinner, instead of having vegetables on the side).

If you use less water, so it's thicker, you can use it as purée along with your dinner.

Low carb LASAGNE - yummy yummy yummy!!

This low carb lasagne (without the lasagne plates, but you can't tell the difference,
 it's just as good as regular lasagne!) is super-delicious! :-)


Ingredients:
Cheese
Ground beef
Tomatoes, chopped (can)
Pizza spice
Onion
Cauliflower
Broccoli
Salt & pepper
Chilli spice
Tabasco sauce
Locust bean gum
Almond flour
Whole milk
Butter
Olive oil

Make the white sauce by melting butter in a frying pan (not too high heat, and don't let it get brown, just barely melt). Add a teaspoon of the Locust bean gum powder, and use two spoons of almond flour, use a wisp. Add little by little some milk, stir (while medium heat), add some more milk, just a little at a time. When you have enough sauce, stir while on heat until it thickens. When done, put aside. Then brown the ground beef in a frying pan (with some olive oil, or butter), and add salt, pepper, pizza spice, chilli spice, a few dashes of Tabasco sauce, the chopped tomatoes, and chopped onions. Boil the broccoli and cauliflower a few minutes to soften them (or not, if you prefer not to), then chop them in smaller pieces. Use some olive oil and smear out in the bottom and on the sides of the ovensafe casserole. Then start adding the layers in there. Start with the ground beef tomato sauce mix. Then add the vegetables, then the white sauce. Top with slices of cheese, then add another layer of ground beef (and some ketchup on top if you want), then cheese again, and put in the oven, on 375 degrees Fahrenheit (200 degrees Celcius) for about 15 minutes. Enjoy your dinner, it's super-delicious!








It's about 4 portions, so put the other portions aside, in your refrigerator, or in the freezer, and save for later. You can have it for breakfast again in the morning, or for lunch the next day, or as a low carb evening snack/meal if you get hungry again later in the evening.

Salmon with salad

Try this low carb meal for dinner.

Ingredients:
Salmon
Sweet chilli sauce
Soy sauce
Tabasco sauce
Ginger
Lettuce
Avocado
Feta cheese
Sugar peas
Cucumber

Mix some sweet chilli sauce (there's sugar in it, so only use a little.. or if you prefer, use olive oil with chilli spice and cayenne pepper in it instead), with a little bit of soy sauce and a few dashes of tacasco sauce. Chop ginger in tiny pieces (smaller than a pea), and put in the sauce (there's no sauce with the ginger on the picture above). Place the salmon in a pie dish or similar, and add the sauce on top. Heat in the oven at 350 degrees Fahrenheit (180 degrees Celcius) for about 15 minutes. Mix the salad ingredients, and put the salmon on top when done. The gingersauce is very good! Adds a zest to the whole meal.

Steak with sauce and vegetables


Ingredients:

Steak/meat (your choice)
Broccoli
Cauliflower
Milk or cream
Mushrooms
Locust bean gum (to make the sauce)
Butter
Salt & pepper

Prepare the steak of your choice. Boil the broccoli and cauliflower. You can mash them both together (but on the picture above it's only the cauliflower that has been mashed). Add the milk (or cream) and some salt and pepper, and possibly a little sweetener ( Splenda, stevia, or similar).
Chop the mushrooms, and heat them in a frying pan with butter. When done, put them aside, and use the frying pan to make sauce.
The sauce: brown some butter in a deep frying pan. Add some locust bean gum (about a teaspoon is probably enough) and stir, and then add just a little water at a time, while it boils. Add salt and pepper to give the sauce flavor.

Low-carb chocolate cupcakes


Want something sweet? Try these low-carb chocolate cupcakes!

Ingredients:
Almond-flour, 1 cup
Cocoa powder, 1 cup
Stevia or Splenda, 1 cup
Baking soda, 1 teaspoon
Butter, 1.75 oz (50 grams), melted
1 large egg
Sour cream, 2 spoons
Some water
Half a bar of 70-80% dark chocolate, chopped (optional)

Mix all the dry ingredients, then add egg, melted butter and sour cream. I would recommend to use Stevia sugar (no calories, no carbohydrates) instead of Splenda/artificial sweeteners, because it will probably make the muffins taste less artificially sweetened.
Add a little water to get the right consistency. Cut the dark chocolate in pieces and add to the mix.
Bake the cupcakes in the oven at 320-340 degrees Fahrenheit (160-170 Celcius) for about 15-18 minutes.

Eggs for breakfast

The most basic breakfast on the low-carb high-fat (LCHF) diet.


Ingredients:
Eggs
Salt and pepper

Optional additions (on the side, or in omelette/scrambled eggs):
Bacon
Ham
Smoked salmon
Mushrooms (omelette)
Chives (scrambled eggs or omelette)
Tomatoes
Bell pepper, etc.

Fried eggs:
Heat some butter or olive oil in the frying pan, and add eggs when warm.

Poached eggs:
Boil water in a deep frying pan, and add the egg.

Scrambled eggs:
Mix eggs in a bowl with some milk (or just water, if you prefer), salt and pepper, and chives (optional).
Heat in a frying pan on medium heat and flip over frequently.

Omelette:
Mix eggs in a bowl (same as above) and heat in a frying pan on low heat until done, so it stays together.

Boiled eggs:
Put eggs in casserole filled with cold water, and heat up (if you put the eggs in the water after it has boiled, they crack). When the water boils, set the timer for 6-9 minutes, depending on how soft or hard you want the yolk (running yolk is usually 6-7 minutes).

This is also a very easy and good snack in the evening if you crave something salt (instead of nuts).
Or eat it as a small low-carb meal inbetween the main meals during the day.

Mozzerella and tomatoes


Want a light (but filling) lunch, or just something to snack on in the evening as few hours after dinner?
Try this low carb light meal with protein and vegetable, very good as a salt snack as well!

Ingredients:

Mozzerella (fresh), cut in slices
Tomato, big one, cut in slices
Salt & pepper, to sprinkle on top

"Bread" / Crackers (very low carb!)

Here is a great recipe for low-carb bread / crackers, that hardly has any carbs in them!
This is actually flat bread, crackers (call them what you want), that you can eat when on the LCHF diet! :-)

Perfect for an occation when you want cheese & crackers, or if you just crave bread, and want to eat it with some regular cheese or ham or whatever you prefer.

Ingredients:

Sesame seeds, 1/2 cup
Flax seed (linseed), 1/2 cup
1 teaspoon Locust bean gum (can skip this)
or 1 teaspoon psyllium husk fiber (can skip this) (they sell it at Whole Foods)

1 small teaspoon of salt
3 tablespoons of almond flour (don't need this if you don't have it)
2 eggs
1/2 cup of melted butter
1 teaspoon of provence spice or other (optional)
Nuts, chopped, like almonds (optional)


Mix everything. Spread out as thin as you can, and then use a sharp knife to press down carefully to help seperate in pieces. (See pictures below)
Then bake in the oven for 15-20 minutes at 350 degrees Fahrenheit  (175 degrees Celcius)







Done!

Here's another batch of low-carb crackers, made from only these ingredients:
linseed, butter, eggs, almonds (chopped), a teaspoon of salt, and a teaspoon of sweetener (splenda).
It still stuck together with only those ingredients(smear it out as thin as you can, but with no holes inbetween).



PS. just make sure you don't eat too many cups of linseed per day. The recommended daily intake is 1-2 spoons of linseed, but half a cup is probably okay, and you can also eat the batch over several days, as there's as much as 15 pieces in the first recipe above. Just keep them airtight in plastic somewhere cool, or on the counter if eaten the next day.

Plain yoghurt with sweetener and linseed (flaxseed)



If you don't feel like eggs for breakfast, this is a another option for a low-carb breakfast.

Ingredients:

Plain yoghurt
Sweetener (such as Splenda)
Linseed/flaxseed


Linseed are very healthy, too! Just read this:

"A mere table spoon of linseed is the health equivalent in lignans, vitamins, minerals and antioxidants of 30 cups of broccoli. Imagine eating 30 cups of vegetables every day!
You would need to consume 50 slices of whole wheat bread to get the fiber equivalent of that same tablespoon of linseed."

Want something sweet in the evening, or in the afternoon instead of coffee, that also fills you up a little more than regular tea? Try this chai latte, very good, just like you buy them at the coffee shop!

Chai tea (Indian chai, for example) (use 2 bags if you want it stronger, or brew with real chai tea)
Milk (whole milk is better, and on this LCHF diet, they say it's better with the milk with more fat)
Sweetener (Splenda, Natreen, or similar)

Small egg salad

Ingredients:

Boiled eggs (2-4)
Mayo
Scallion, chopped
Salt and pepper
(Optional: add shrimps, crabstick, ham)

Smash a few boiled eggs with a fork in a bowl. Add mayonaise, scallion, and sprinkle with salt and pepper.

Hot Spinach Dip! (Super-delicious!)

This Hot Spinach Dip is the best low-carb high-fat snack you'll ever try...! (Well, at least it ranks high!)


It is the most delicious when fresh and warm right out of the oven (and not as yummy after refrigerated, although you can still eat it cold.. if there's anything left at all..!).

Ingredients:

3-4 handfulls of spinach (rinsed, trimmed and coarsely chopped)
Scallion, chopped (use several ones for lots of taste)
Garlic, chopped in small pieces
Cream cheese, half a box (60 gram)
Cheese, 1 cup, shredded
Taco sauce, one full tablespoon
Cayenne pepper, a few dashes
Chilli spice, a few dashes
Salt and pepper
Milk (preferably whole milk), 1/2 - 1 cup, see how much is needed.

Put it all in a large pot, which you've first smeared with olive oil.
Heat in oven at 425 degrees Fakrenheit (or 200 degrees Celcius), for 20-25 minutes.

To dip with:

Cut cauliflower in long pieces, so you can use to dip with, or use the Bread/Crackers, which you find the recipe for here (search this blog for "Bread" or see under "Carb-like in substance").

Berry smoothie!

Yummy! Sweet and good; as a dessert, drink between meals, or evening treat!

Ingredients

Frozen raspberries, blueberries, etc.
Splenda sweetening
Plain yoghurt, a few spoons
Sugarfree, but artificially sweetened berry/orange/lime lemonade, pour a little in there
Add some water if needed

Berries should be covered in liquid. Let it sit for a few minutes, so berries aren't so hard (since frozen).
Then blend with a mixer.


Mmmm... very good!
Sweet, but sugarfree!

Salad with feta cheese, avocado, beans (with tuna, chicken or ham)

This salad is very good, and on this picture, there is tuna in the salad, but you can use chicken or ham or shrimps instead.

Ingredients:

Lettuce
Tomatoes, chopped
Avocado, half, in pieces (sprinkle some salt on)
Feta cheese in oil (use some of the oil as dressing)
Kidney beans
Tuna, or chicken, or ham, or shrimp
Cucumber, chopped (optional)
Pine nuts (optional)
